Taco Tuesday is a meal my family enjoys more often then Tuesdays that roll around. It’s fast, it’s delicious and EVERYBODY cleans their plate. Barely a day goes by that someone doesn’t ask for tacos for dinner. It’s usually my oldest… and he’s game for just about anything as long as it’s stuffed inside a taco shell. My picky eater even cheers on taco night, it’s one dinner I know I won’t hear complaints over.

I just had to share with you the delicious dinner my family just enjoyed. Remember how I said we were going to have the Cheesy Chicken Rollups? Well, we replaced the chicken with leftover turkey from Easter dinner and OMG they were delicious!
Here’s how we did it.
In a frying pan I put 2 cups of water, the seasoning mix from the Old El Paso Taco kit, and my leftover turkey. I fried it in the pan until the liquid was gone.
While that was on the stove I prepared 6 small torts from the kit, on them I put bacon (mmmm) lettuce and Touch of Philly shredded cheese (Remember those coupons!) Then I topped them with the turkey mixture and put them on the grill. So much yum!
I made two for each of us, and they were gone in seconds! I think we may have found our new favorite meal! Though, I think I’ll do them for lunch rather than supper… I can’t keep the kids around the table long enough for a chat with these…they’re gone so fast!
