Fruit and Nut Peanut Butter Snack Bites

There is something about peanut butter than makes me feel like a kid again.  The sweet goodness baked in a cookie, or licked right from a spoon puts a smile on my face.  Instantly I am taken back to elementary school lunches and after school snacks.  Peanut butter was always in the house, for the perfect, easy snack (that even kids could make!)

I am grateful that my kids get to enjoy that same snacking ease after a long day at school, but we like to get a bit more adventurous when it comes to our peanut butter.  Quick and satisfying… those are the kinds of snacks that I look for. And these Peanut Butter Snack Bites fit the bill perfectly.  Kraft Peanut Butter with honey and large flaked oats, and all my favorite things!

And no… I didn’t include chocolate.

Now, don’t get me wrong… I love that mixture.  But for this snack, I wanted something that reflected my love of trail mix.

So I grabbed all my favorite things (full recipe below) and I mixed them together in a bowl.


It was a little bit sticky… it took a little elbow grease, but I got it all mixed up.



Then I rolled them all up into little bite size balls and rolled them in toasted coconut. I use the term toasted lightly… though it’s not lightly toasted. Wait, what?

Then I just chilled them in the fridge.

These fruit and nut peanut butter snack bites are simple to make, and delicious!  A great snack for when those little hunger twinges strike.

Fruit & Nut Peanut Butter Snack Bites

Peanut Butter Bites


  • 1 cup large flake rolled oats
  • ½ cup Kraft Crunchy Peanut Butter
  • ¼ cup Honey
  • 2 Tbsp dried cranberries
  • 2 Tbsp pumpkin seeds
  • 1 Tbsp pine nuts
  • ¼ cup raw coconut, toasted ß optional

In a medium bowl, mix together the first six ingredients.  Roll into small balls, approximately 1.5 Tbsp per ball  (You should get around 20 snack bites). I recommend when you’re rolling the ingredients together, give it a squeeze so everything sticks well together.  This is a messy (but worth it) step.

After you’ve created all your little Peanut Butter Snack Bites, roll them in the toasted coconut (if you chose to do so).

Toss them on a plate and refrigerate.

It’s just that easy.

And what you end up with are these delicious little bites of goodness, filled with everything YOU wanted in them!  No fuss and NO BAKING!
