I know it’s all the rage right now, with its complete protein it has become a popular choice for healthy eating! And as we all know, healthy can be delicious! Quinoa is so versatile that it can be mixed in to just about anything…I once made a gluten-free chocolate cake with ground quinoa!
Lately I have been looking for ways to replace some of the starches in our meals. Now, as a meat and potatoes girl, I don’t want to get rid of them all together, but just for maybe one meal a week, say goodbye to the potatoes or the rice and replace with something just as filling.
We have a bunch of Quinoa recipes that have now become those replacement foods in our families diet.
Mushroom Fried Quinoa
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 small onion (diced)
- 10 mushrooms (chopped)
- 1.5 cups Quinoa
- 3 cups chicken stock
Directions – in a non-stick frying pan heat olive oil. Sautee onion and garlic until onions are translucent. Add mushrooms and cook until soft. Add Quinoa to the mixture and toast, uncovered, for 2-3 minutes. Add chicken stock, cover and heat until boiling. Reduce heat to medium and cook for 20 minutes.
