I was given a challenge these past few weeks…to create a delicious recipe using Dempster’s Zero. You may be wondering what Dempster’s Zero is. Well, it’s one of their new lines of bread that have no added fat or sugar. I must admit, I thought it would be as hard as a rock when first given the challenge…I mean, bread with no added sugar or fat? But I was very much surprised! This bread is soft and delicious…and to taste it you wouldn’t know it was missing anything at all.
So…create a recipe I did. I tried this and that, making sandwiches with yummy ingredients, and not one single attempt failed me. But when it comes to recipe creation, you must try and try again, and this is what I have to share with you today.
French Toast with Berry Reduction
What You Need:
- 4 slices Dempster’s Zero Whole Wheat Bread
- 3 Medium eggs
- 1/2 C low fat milk
- 1 tsp cinnamon
- 1 cup frozen berries
- 1/4 cup water
- 1 tsp butter
- powdered sugar (optional)
Method: In a small sauce pan, put berries and water. Bring to a boil and mash-up the berries once they soften. Reduce until it thickens. In a long, shallow dish, whisk together eggs, milk and cinnamon. The cinnamon will not mix well, but it will coat your bread. Place bread in the dish and allow it to soak up the egg mixture, flipping once to saturate both sides. Heat a non-stick frying pan until it’s hot, and melt butter (do not let the butter burn) and reduce heat to med. Put saturated bread in the frying pan and cook (on medium) for about 8 minutes, flipping once half way through. Plate your French Toast, drizzle berry reduction and dust with powdered sugar.
