It seems like only yesterday I was complaining that winter just wouldn’t go away, then all of sudden summer has sprung. Usually I would say that spring has sprung but somehow, this year, spring was forgotten. We went from frost ans flurries to 30+ degrees in a matter of days! All of a sudden it’s too hot to cook! Too hot to bake, and I didn’t have fridge stocked with all I need for summer recipes!
I will do just about anything to avoid heating up my kitchen when the days are hot, so I try to make sure I always have enough fresh produce for salads and sandwiches on hand. A weekly visit to our local farmers markets makes this easy! My goal is to be able to create yummy foods that will satisfy my family, but that don’t require a lot of cooking or prep work to make. Salads, sandwiches or wraps and a simple dessert like this Caramel Apple Salad!
Summer Go-To Garden Salad
- Your favorite salad greens (we usually stick with romaine lettuce)
- 3 Hard boiled eggs sliced (an egg slicer comes in handy for pretty presentation)
- 2 Celery Stalks, sliced on the diagonal
- 1/2 Red Onion
- 4-6 Button mushrooms
- Thick Cut deli ham, cut into chuncks
- Cheddar Cheese cubes
Layer your salad beginning with the greens, then onion, celery, mushroom, cucumber, tomato, ham, egg and cheese. If you are looking for a great presentation, put your layers together carefully, and do not toss the salad until everyone is sitting down for the meal. Do not add dressing to the large presentation bowl, instead offer a variety of dressings for each persons individual preferences.
If a big family BBQ is in your near future, you can take this simple recipe and present it on a grand scale! Rather than putting your salad together in a salad bowl, create a build-your-own-burger-and-salad bar buffet style. Doing this can broaden the variety of the salad and toppings for your burgers! You can even pre-boil Rotini pasta and add it to the line. I am a huge fan of pasta salad!
